Cara Ruby - Montana Craft Malt
Our Cara Ruby malt comes from our friends at Montana Craft Malt. MCM Cara Ruby follows a recipe similar to the Melanoidin Gold, with a high level of air recirculation in the kiln that produces a similar effect to saccharification rest found in mashing. Higher curing temperatures are used to drive dark melanoidin flavors that add richness to any style of beer. This malt is typically used at <5% of the grist bill and no more than 15%. MCM Cara Ruby produces a copper color that has flavors of sweet graham cracker and hints of caramel.
